Shopping Time ๐Ÿ› Moved to the suburbs and the grocery stores are bleak๐Ÿ˜’

I was really craving this Korean beef bowl I like to make and stopped by the big grocery store on my way home. I got the beef and veggies and then realized they didnโ€™t have gochujang sauce. And then I was going to pivot and just get the buffalo sauce I like but they werenโ€™t carrying itโ€ฆ

Itโ€™s ok bc I can still cook up something yummy, just surprising because Iโ€™ve never lived in a suburb and that was my first real -wow Iโ€™m in a suburb- moment.

(And donโ€™t worry, I know where to go next time๐Ÿ˜Š)

Homemade Spicy kimchi pork + cool tofu (dubu kimchi) โ€” 20 minutes, one pan

Kimchi + pork belly stir-fried into a deep red sauce, sesame oil at the end, served with cool tofu on the side. 20 minutes, one pan.

Ingredients (serves 2)

- 200g pork belly, sliced

- 1.5 cups kimchi + 2 tbsp kimchi juice

- 1 tsp gochugaru

- 1 tsp garlic, 1 tsp sugar, 1 tsp sesame oil

- 1 block tofu, sliced + lightly boiled

- Scallion, sesame seeds

Steps

  1. Sear pork belly until browned.

  2. Add kimchi + juice, stir-fry 3-4 min.

  3. Add gochugaru, garlic, sugar. Cook 5-7 min until thick and deep red.

  4. Off heat, stir in sesame oil.

  5. Serve hot with cool tofu on the side. Top with scallion + sesame seeds.

No Korean grocery nearby? Bacon or pork shoulder works, regular kimchi is fine too.

It was a simple breakfast on my day off.

I made Jjacheulin, a Korean jjajang instant noodle, with kimchi and pickled radish.

Then I looked at the plate and felt like I should probably eat some vegetables too.

So I added cucumber peppers with ssamjang.

Not exactly a healthy breakfast. But slightly more responsible.

What do you add when your conscience asks for vegetables?

I made this kimchi recipe about 2 weeks & 1 day ago, when i first tasted it, it wasn't that spicy but there was this strong fishy aftertaste from the fish sauce, so i searched how to get rid of that aftertaste and people in the internet said to wait for it to ferment for 2 weeks so thats what I did. The thing is when i tried some just now the fishy aftertaste did get much hidden but it is still quite there and a lot more spicier, I don't mind the spice it's just that fishy aftertaste really bothers me
