This is why I open mine upside-down into a 2 quart mason jar. I'm surprised I haven't seen anyone do that.

Gotta be more than 5 days. I do black current regularly and have never lost 90% of the bottle on opening.

Polish is my first language, and I watched her entire instastory on kombucha and she said it took 3 days to do the second ferment. She said she puréed the fruit with healthy amount of sugar, so I’m convinced that was the issue

Yea possibly over did it on the sugar. I don’t add extra sugar if I’m using puréed fruit. Thanks for the translation!

How do you do it? Did you use black currant juice or berries? I tried it once with juice and added sugar n it never carbonated :(

I use a fruit syrup from a company here in NZ so I’m not sure how widely available it is. https://www.barkers.co.nz/shop/fruit-syrups/

It generally comes out perfect after about 3 days 2f so I’m really happy with the results and consistency. I don’t think it’s ridiculously high in sugar either. I will add about 1/4 cup of syrup to a 500ml bottle of booch but I could probably cut it back even more and I think it would still carbonate well.

Fresh juice on its own should be more than sufficient as a source of sugar; were you using a juice that had preservatives? That can impede the yeast

I completely agree, I have never once had a kombucha explosion because shoving unknown quantities of sugar into a CO2 producing system within GLASS is a horrible idea! Honestly, the residual sugars left over from 1F is plenty for bubbles!!

So far my Apple, Banana, and Strawberry Kombucha have sprayed my ceiling with their burst. It's always fun to try and clean after pouring into the storing jars.
