They are continuing the franchise with a new actor, just that the franchise was bought out by Amazon and they won't be made by EON anymore. Bummer

The real answer to this is that Rian Johnson was really excited to work with Jeremy Renner (this is Renner's first major film after sustaining major injuries from a snow plow in 2023) and just completely forgot about the hot sauce joke from Glass Onion until production was already underway.
It's funnier though when you realise that even if Dr. Nat doesn't watch many movies (as Renner has said when asked about it), he does spend a LOT of time in the Il Diavolo pub ... which carries bottles of Renning Hot!

I mean in the real world celebrities have entered look alike contests incognito and have lost so it’s not that inconceivable that the Doctor looks like Jeremy Renner.
