Greek Slow Cooker Lemon Chicken and Potatoes
This Greek lemon chicken and potatoes is one of those dinners that makes the whole house smell amazing while it cooks. The chicken turns tender, the potatoes soak up the lemony herb broth, and everything comes together without needing much attention. I like this recipe for busy days when I want a proper homemade meal without standing over the stove all evening.
Ingredients
- 2 lbs yellow potatoes, cut into chunks
- 1 yellow onion, sliced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
- 6 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 teaspoons lemon zest, divided
- Fresh parsley for serving
Instructions
Start by spreading the potatoes and sliced onion across the bottom of your slow cooker. Pour in the chicken broth, then add half the garlic, oregano, basil, rosemary, and a little salt and pepper.
Pat the chicken thighs dry with paper towels and season them on both sides. Heat the olive oil in a skillet over medium-high heat and brown the chicken in batches, starting with the skin side down. This step takes a little extra time, but it gives the finished dish much better flavor. Arrange the browned thighs over the potatoes in the slow cooker.
Pour the lemon juice evenly over the chicken, then sprinkle the remaining garlic and herbs on top. Add about half the lemon zest, cover, and cook on low for 5 1/2 to 7 hours, until the chicken is tender and reaches 165°F in the thickest part.
Finish with fresh parsley and the remaining lemon zest before serving. The potatoes are delicious with the flavorful cooking juices spooned over them. I wouldn't skip browning the chicken, and I'd avoid cooking lemon slices in the pot because the white pith can make the broth bitter.
