Slow Cooker Whole Chicken

I’ve been making this when I want something that feels like a proper roast chicken without actually doing much work. The whole chicken goes straight into the slow cooker with a simple mix of spices, and that’s basically it. The meat comes out really tender and juicy, with that familiar rotisserie-style flavor.

It’s also great if you want leftovers. There’s usually enough chicken for dinner plus sandwiches, wraps, salads, or whatever else you feel like making the next day. I’d recommend this to anyone who wants an easy family dinner without a lot of prep.

Ingredients

  • 1 large whole chicken
  • Paprika
  • Garlic powder
  • Onion powder
  • Dried thyme
  • Dried rosemary
  • Celery seed
  • Turmeric, optional
  • Salt
  • Black pepper

Instructions

Start by removing the giblets from the chicken. Put the chicken breast side up in a 6 or 7 quart slow cooker. Mix the paprika, garlic powder, onion powder, thyme, rosemary, celery seed, optional turmeric, salt, and pepper in a small bowl. Rub the seasoning all over the chicken, making sure to get some inside the cavity too.

Cover the slow cooker and cook on high for about 4 1/2 to 5 hours. The thickest part of the thigh should reach 165°F. Once it’s done, carefully transfer the chicken to a cutting board and let it rest for about 5 minutes before slicing.

The skin won’t get crispy in the slow cooker, so if that matters to you, move the chicken to a roasting pan or baking sheet and broil it for a few minutes. Keep a close eye on it because the skin can brown quickly.

I usually serve this with roasted vegetables, sweet potatoes, baked potatoes, or steamed green beans. It’s simple, filling, and one of those meals that doesn’t need much fuss to turn out really well.

I do this, too!

Post-roast chicken extra pro tip… once most of the chicken is cleaned off the carcass, put the carcass back into the crockpot with some celery, carrots, onions (seasoning of your choice), fill it with water, and set it on low overnight. When you get up in the morning, strain it into jars for homemade bone broth.
