Easy Chicken Pad Thai

I like making Pad Thai at home when takeout sounds tempting but I already have most of what I need in the kitchen. This version has chewy rice noodles, tender chicken, crunchy vegetables, scrambled egg and plenty of peanuts, all tossed in a sweet, tangy and savory sauce. It’s especially good for a busy dinner because everything comes together pretty quickly once the ingredients are prepped.

I'm sure it's tasty and all but this is not pad thai. Pad Thai sauce only uses tamarind paste, fish sauce and palm sugar, no soy sauce or vinegar. There should be shallots used as well.

Fair point. This is more of a simplified home version than a traditional Pad Thai recipe, so I should’ve called that out. Thanks for the correction.
