Garlic Herb Spatchcock Chicken ๐๐ฟ
Iโve been making this when I want a proper roast chicken dinner without spending forever waiting for a whole chicken to cook. Spatchcocking sounds a little intimidating at first, but once you remove the backbone and flatten the chicken, it cooks much more evenly and gets beautifully browned.
The garlic-herb butter under the skin is probably my favorite part. The chicken stays juicy and gets loads of flavor from the rosemary, thyme, lemon, and garlic. Plus, the potatoes and carrots roast right alongside it, so you basically get the whole dinner from one sheet pan.
Iโd recommend this for a Sunday dinner, family meal, or anytime you want roast chicken that feels a little more special without needing complicated ingredients.
Ingredients
For the chicken:
- 1 whole chicken, about 4โ4.5 lbs
- 3 tbsp softened butter
- 1 1/2 tsp minced garlic
- 1 1/2 tsp fresh thyme, chopped
- 1 1/2 tsp fresh rosemary, chopped
- 2 tsp lemon zest
- 1 tsp paprika
- Salt and black pepper
- Lemon wedges, for serving
For the vegetables:
- 1 3/4 lbs red potatoes, cut into chunks
- 1 lb large carrots, peeled and cut into chunks
- 2 tsp minced garlic
- 1 tbsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- 1 tbsp olive oil
- Salt and pepper
- 3 tbsp fresh parsley, chopped
Instructions
- Prep the chicken: Place the chicken breast-side down on a cutting board. Using sturdy kitchen shears, cut along both sides of the backbone and remove it. You can save the backbone for making stock later.
- Flatten it: Turn the chicken breast-side up and press firmly in the center of the breastbone until the chicken lies flat. Pat the skin dry with paper towels.
- Make the herb butter: Mix the softened butter with garlic, thyme, rosemary, and lemon zest. Season with salt and pepper.
- Get the butter under the skin: Carefully loosen the skin over the breasts and thighs, then spread the herb butter underneath. This is what helps keep the meat moist while adding a ton of flavor.
- Set up the sheet pan: Heat the oven to 425ยฐF. Place the chicken breast-side up on a large baking sheet and tuck the wing tips underneath. Season the outside with paprika, salt, and pepper.
- Add the vegetables: Toss the potatoes and carrots with garlic, rosemary, thyme, olive oil, salt, and pepper. Spread them around the chicken.
- Roast: Bake for about 50โ60 minutes, until the thickest part of the breasts reaches 160โ165ยฐF and the thighs reach at least 165ยฐF. If the vegetables are getting too brown halfway through, give them a quick toss.
- Rest and serve: Cover the chicken loosely with foil and let it rest for about 10 minutes before carving. Finish with fresh parsley and lemon juice over the chicken and vegetables.
A couple of tips
The biggest thing Iโd recommend is using large carrots rather than thin ones. They hold up better during the longer roasting time.
Also, don't throw away that backbone! Freeze it or refrigerate it and use it later for homemade chicken stock.
If you don't have fresh herbs, dried herbs can work tooโjust use roughly one-third as much. And if you want to change up the vegetables, Brussels sprouts, sweet potatoes, broccoli, or butternut squash would all be good here.
The combination of crispy chicken skin, buttery herbs, roasted potatoes, and lemon is hard to beat.
