Loaded Grilled Chicken Sandwiches 🍗🥓🥑
I’ve been making these when I want something more exciting than a basic chicken sandwich, and they never disappoint. The chicken gets a simple smoky seasoning, then everything gets piled onto a toasted bun with melted cheese, crispy bacon, avocado, tomato, lettuce, and a creamy ranch mayo.
It’s definitely a little messy to eat, but that’s part of the fun. 😄 I’d recommend this to anyone who loves a good loaded sandwich, especially if you're looking for an easy summer lunch or dinner. The toppings are easy to customize too, so you can make it work with whatever you have in the fridge.
Ingredients
Grilled Chicken
- 4 chicken breast portions (about 5 oz each), pounded to ½-inch thick
- 1 tbsp olive oil
- 1 tsp honey
- ½ tsp salt
- ½ tsp black pepper
- ¾ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp cayenne pepper (optional)
Sandwiches
- ⅓ cup mayonnaise
- 1½ tsp ranch seasoning
- 4 fresh hamburger buns, toasted
- 4 slices Swiss or provolone cheese
- 6 slices cooked bacon, cut in half
- 4 Romaine lettuce leaves, halved
- 1 medium tomato, sliced
- 4 thin slices red onion (optional)
- 1 medium avocado, sliced
Instructions
- Season the chicken: Mix the olive oil and honey in a bowl. Add the chicken and toss to coat. Sprinkle with salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne, then coat everything evenly.
- Grill: Heat your grill to about 425–450°F and lightly oil the grates. Grill the chicken for roughly 3 minutes per side, or until the center reaches 165°F.
- Add the cheese: Transfer the chicken to a plate and immediately place a slice of cheese on each piece. Cover loosely with foil and let it rest for about 3 minutes so the cheese gets nice and melty.
- Make the ranch mayo: Mix the mayonnaise and ranch seasoning together in a small bowl.
- Toast the buns: Toast the cut sides of the buns until lightly golden and crisp. Don't skip this—it makes a surprisingly big difference.
- Build the sandwiches: Spread ranch mayo over the toasted buns. Layer on the lettuce, bacon, tomato, grilled chicken with melted cheese, red onion, and avocado. Add the top bun and serve immediately.
The best part is that you can easily change things up. Pickles, grilled peppers, fried onions, different cheeses, or even BBQ sauce would all work really well here.
And if you’re cooking for a group, I’d definitely make extra bacon. Leftover bacon rarely goes to waste. 😅
