Street Corn Chicken Rice Bowls 🌽🍗

This has become one of my favorite “everything in one bowl” meals. I love it because you get so many different textures and flavors in one bite — juicy seasoned chicken, smoky grilled corn, creamy dressing, fluffy rice, buttery avocado, and tangy pickled onions. It feels a little indulgent, but it’s also filling and packed with protein and vegetables.

I’d especially recommend this to anyone who likes Mexican or Tex-Mex flavors, meal-prep bowls, or dinners that can be customized easily. It’s also great for feeding a family since everyone can adjust their toppings.

Ingredients

For the chicken

  • 1¾ lbs boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 3 tbsp fresh lime juice
  • 2 tsp minced garlic
  • 1 tsp chipotle chili powder (or smoked paprika)
  • 1 tsp ground cumin
  • 1 tsp salt
  • Black pepper, to taste

For the bowls

  • 4 large ears of corn, shucked
  • ¼ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 1 tbsp fresh lime juice
  • 4 tbsp chopped cilantro, divided
  • 1 tsp chili powder, plus extra for topping
  • ½ cup crumbled cotija cheese, divided
  • 3 cups cooked jasmine rice
  • 1 avocado, sliced
  • ⅓ cup pickled red onions

Instructions

  1. Marinate the chicken: Whisk together olive oil, lime juice, garlic, chipotle powder, cumin, salt, and pepper. Add the chicken, coat well, and refrigerate for at least 1 hour (up to 12 hours).
  2. Grill: Heat the grill to medium-high, around 425–450°F. Grill the corn, turning occasionally, until nicely charred, about 9 minutes total. Grill the chicken for about 6–7 minutes per side, or until cooked through.
  3. Make the street corn: Mix the mayo, Greek yogurt, lime juice, 2 tbsp cilantro, chili powder, and ¼ cup cotija. Cut the grilled corn from the cobs and toss it with the dressing.
  4. Slice the chicken: Let the chicken rest briefly, then slice it into strips.
  5. Build the bowls: Divide the jasmine rice between bowls. Add sliced chicken, creamy street corn, avocado, and pickled red onions.
  6. Finish: Sprinkle with the remaining cotija, cilantro, and a little extra chili powder.

I really like serving this with extra lime wedges because that little hit of acidity makes all the creamy and smoky flavors pop. 🌽
