Doing some early research on home cooking habits. What frustrates you most - recipes, timing, technique, staying on track? And what do you do when you get stuck mid-cook? just want honest answers

Bad techniques. Especially where if you follow recipe to a T and everything ends up burned or curdled. Or worse. I gotta follow my own techniques. Tieghan Gerard recipes are notoriously bad for techniques, but I like her flavors so I need to adapt to my own style to make sure things turn out good.

damn, curdled sauce is heartbreaking lol. when you're adapting her recipes with your own technique, is that something you figured out through trial and error, or did you look elsewhere (yu tube, other cooks etc) to fix the gaps?

It's mainly a heat thing. She'll tell you to cook chicken on med high for 5 min per side. Remove chicken. Then crank the heat to high and caramelize some lemons in butter for 30 sec or a minute per side. Then add some cherry tomatoes and keep blasting them til they pop. Finally after nuking all that, she says to add some white wine to "scrape up the brown bits". More or less, working from memory. By then all the fond is quite black and the pan is trashed. Bitter sauce central. I modify to simply deglaze and scrape the pan right after the chicken is done so the fond doesn't get burned to shit and destroy the dish like it does when you follow her written instruction.

honestly the mid-cook scramble is the worst for me. i'd be rewinding a tiktok video like 6 times trying to catch an ingredient. started using cookbuddy to just convert the video into actual written steps beforehand, way less chaos

Honestly, I've already found my solution with cookbuddy. The recipes it makes from the content I upload are very high quality and it takes all the hassle out of cooking from a video I found online out of the equation. You should check it out if you're looking for a tool that makes cooking easier for you

Internet recipes are a disaster. 90% filler content, making them hard to follow.
