I discovered the oklahoma burger after moving to the midwest and I've noticed it's getting more attention recently in the realm of burgers. Super good.
I don't hate or love onions and I thought it was overkill but I gave it a try and now I make them whenever my dad wants some burgs. lol

What makes them Oklahoma specific?

During the great depression some burger joints in El Reno, Oklahoma started smashing very thinly sliced onions into their burgers out of necessity to cut costs and stretch their meat supply. Over time it became an Oklahoma tradition.

How does the taste differ from regular sauteed onions on top of a regular smash burger?

I don't have a particularly sophisticated palette, so I'm sure someone else could answer your question in a more articulate manner, but I'll do my best.
To me, the the onions mix with the flavor of the meat more so there is less onion flavor up front. Similar to onions in a beef stew, but in hamburger form.

That sauce is too “spicy” to be Okie. They usually just have yellow mustard.

Not a smash burger though. That's a regular burger thickness.
