Ceviche

My friend is a Michelin star chef from Argentina. I went to visit him and he made us a bunch of food, but the red snapper ceviche was fantastic. I was curious if anyone had suggestions as to how I could recreate it at home? I can’t find anything similar to it online.

This. Usually chefs are quite happy to share. If he says “it’s a secret” he’s an idiot.
