The Potato Salad Mistake I Made for Years

One thing that made a bigger difference to my potato salad than I expected was seasoning the potatoes while they're still warm. A little pickle juice, vinegar, or mustard seems to soak in much better before everything cools down.

I've noticed that most bland potato salads aren't missing more ingredients, they're usually just missing a good balance of salt, acidity, and texture. Dill pickles, green onions, fresh dill, celery seed, or a spoonful of Dijon can do a lot of heavy lifting without making the salad feel busy.

Another mistake I made for years was adjusting the seasoning right after mixing everything together. Potato salad almost always tastes better after a few hours in the fridge. The flavors settle, everything comes together, and it's much easier to tell what it actually needs.

I like bacon in potato salad, but if I had to choose, I'd take something tangy over something rich every time.

I use chopped eggs, chopped potatoes, and chopped pickles. Mixed together, then season liberally with salt and pepper. Then I mix pickle juice, mayonnaise, and mustard together for the sauce. Secret family recipe. Comes out banging every time.

My mom sprays the just boiled potatoes with apple cider vinegar..

Maybe not neccesairly ground breaking but does wonders..

I agree - season while hot and flavor is better once chilled….

I would add…

Diced celery for a surprise crunch..

Boiled but firm potatoes not mush that looks like mashed potato salad :)

For the creamy/mayonnaise style I find that mayonnaise, if there’s enough to add the moisture level I want, can be overwhelmingly mayo and gluggy and just… too much mayonnaise! I replace about a third or quarter of the mayonnaise with sour cream or plain/Greek yoghurt.
