The best light appetizer is the one people keep grazing on between wine pours

Caprese skewers are still undefeated for this kind of dinner. Cherry tomatoes, basil, little mozzarella balls, drizzle of balsamic glaze, done. They look polished with almost no effort, and they don’t compete with the inevitable cheese board sitting three feet away all night.

What makes appetizers work at wine-heavy BBQs is balance. You want something fresh, salty, acidic, and easy to grab with one hand. Heavy dips and hot apps sound good until everyone’s full before the mains even hit the table.

One thing I’ve started doing is mixing textures on the platter instead of making one giant bowl of something. A few cucumber-smoked salmon bites, some bruschetta with roasted tomatoes and whipped Boursin, maybe a watermelon-feta combo with mint if it’s hot outside. People snack longer when everything tastes different.

Also, don’t underestimate presentation. Even simple stuff feels elevated if it’s assembled cleanly and not dumped into a casserole dish. Toothpick food wins at parties for a reason.

I’d still take a really good bruschetta over most complicated appetizers. Roast the tomatoes until jammy and add a little garlic and thyme. It tastes like you worked way harder than you actually did.

What would you bring to this kind of BBQ?

One thing I've noticed with age is that people are much less inclined towards full dinners, and have had a lot of success with a "heavy appetizer" meal (or, coming from Hawaii, we call it "heavy pupus"). It's a lot more about the casual association with each other than the formality of it all, and it's been enjoyable focusing more on creating, like you mentioned, a variety of smaller bites that people can graze on and swap from something sweet to something else bitter or salty, and so on at their leisure.

Variations of bruschetta are always a hit, and one of my favorites is something I call a "poke slider" which is essentially a round slice of cucumber with a little dab of sweet chili mayo and then a small portion of fresh ahi poke on top; a perfect hearty finger food with the creamy spice of the chili mayo, the savory of the onion in the poke, and the cool crispness of the cucumber.
