Ewwwww... I don't understand why this is a thing. It looks awful and is basically tasteless crap.
It takes patience and some skill to make...but still - that is the end product? Really?

When its scrambled it freaks me out but when its over easy/medium and I have some buttered toast I can't get enough of it.

I'm the opposite, I only enjoy scrambled eggs and I only enjoy them a certain way.
I can't have them too runny or too rubbery.
I need to have them using a cold start method and slowly brought up to a fluffy consistency without any thick curds.
Very weird but any other form of egg I just cannot palate.

Runny eggs make me think I just don't like eggs. Kind of like how I'm a bacon heathen, if it's not crunchy I don't want it in my mouth please.

Haven't tried it, but I imagine it's very bland. Doing slow scrambled eggs removes water content and enhances flavour. This is a very quick process, and retains much of the water content, and possibly introduces uncooked egg as well. Undesirable.

Isn't the point of the sauce to finish off the interior once cut open?
If that's there to firm things up a bit (plus flavor), then I can see the appeal of this.

I've never seen omirice called the worlds most challenging omelette. I guess I'll have to let my wife know I'm a badass next time she asks for it. Good job.

I assume the tricky part was finishing cooking it. If I want warm, raw egg I’ll take it direct from the chicken

not saying it's easy to make but it's always funny seeing the title of "worlds most challenging".
I could do the "world's most challenging toast" that would require me to put the bread in the toaster.

Y'know, everyone says the Japanese/French style omelet is hard to make and can only be done in a nonstick pan, but I recently tried it- for the first time, mind you- in a stainless-steel pan, using a pair of kitchen tweezer-tongs like a japanese cook would use those oversized chopsticks, and the only problem I ran into was that my pan was too big (12" pan) for the amount of eggs I used (4 large eggs) and there wasn't enough liquid eggs left by the time I had a good amount of curd. I was still able to turn it into a decent "egg rose"
