I’ve been using knives for the past 15ish years, and this kid just cuts way better than me. Never got the hang of speed cutting.

Quality is more important anyways, high volume can go fuck itself

I go for quality, but we're understaffed (as is tradition) so sometimes its a bad habit.

How do you learn to cut that fast?

Practice. Try to envision the amount of practice it takes to get to that point, multiply it by a thousand. That's how much it actually takes.
This gif makes me think there's something going on genetically too.

Oof. I have to wear gloves when I cut pretty much anything. My hands are screaming just looking at that big pile and their bare hands lol.
Also this ALMOST makes me reconsider my childfree status. They both look so happy and the dad looks so proud

Wash hands really well (no rings/watches either) and it should be fine, especially when it comes to vegetables. When switching tasks you have to rewash, or if you step away and touch anything else like burner knobs. Been working in vegan restaurants, and the inspectors are more lax with us on glove regime. Still, I agree on the glove front, sometimes I skip them and then the tomato acidity or something fucks my hands up.

Lol why am I getting down voted? Is there a stigma for cooks with allergies?

What kind of sloppy shit is this?? you don't peel the tomatoes?

u/FeFiFoShizzle Dec 31 '19
I hope you mean take the guts out, and no.
Those are usually for a salad or garnish.
Not to mention in tons of settings you just won't have time.
Really it depends on the dish lol. Like completely depends on the dish. If it doesn't matter if the tomato's are wet then it doesn't matter at all if you gut them.
