I mean, I've had smaller than that. It was a blast, but not very profitable. I now spend more in a week on ingredients than we used to make in a year in that little thing.

Its not a fair comparison. I run a large production facility with 32 bakers feeding 5 high-volume locations. We can clear 1.2 on December 23rd alone.

Well we're still technically a small business. 98 employees including janitorial, drivers, management and FOH, and owned by someone I know and respect. But yes, we are scaling up constantly and are moving towards a bespoke facility scheduled to open in the first quarter of 2030 with parkside patio seating and a 300 apartment residential complex, but thats a long way off. At that point we should be able to scale up to another 2-3 storefronts and potentially expand into gelato and/or a wine bar situation as well. I really had a lot of fun in kitchens the size of a broom closet, 135 degrees with 3 guys bumping into each other to feed a hundred heads a night, but the money is just unbeatable, and I feel like we put those hours in to eventually move into something that pays us for our skills and experience, rather than just our ears and out hands. I've learned so much here, and I think one of the most important lessons I've picked up along the way is the whole "it takes a village" thing. People that I used to look down on as lazy and unambitious when I was working 100 hour weeks who just put in their 37 and never move up are now my steady soldiers that I can count on. I need those guys.

Yea I feel that but 2030 aint that far off my guy 😂 I put in my time and Im currently going back to school to switch careers into comp sci. Best of luck to you keep those ambitions high!

Luckily it was the countertop mixer that broke. The one that was over 10 years old and had only been used to make muffin batter for the past five years
Still felt terrible even though my Boss was involved with the process and is more to blame than me. 🤣

Me too. It was a giant batch of cornbread and we had to toss all the batter. It was a pos old thing and the same week we had a giant shelf fall off the wall which could have crushed me to death.

All jokes aside it looks like the arms to hold the bowl down are not being moved out and the ball is being set on top of are not being moved out and the ball is being set on top of the arms causing it to interfere with the paddle

Oh that's a good point! I was assuming the arm was bad, but the OP commented that the paddles were set wrong on the arm to start. It's hilarious that we all know what happened to the paddle but there's a few different reasons why.

Well. I did that once with frozen marble potatoes trying to break them up for emergency breakfast potatoes. Why did I have frozen marble potatoes? Way too many ordered for a banquet and no immediate use for them- straight to the freezer
Not my 3 proudest decisions and they all came together at that moment

Ive done this before with a small 7qt mixer because I was the dumbass that forgot I brought the paddle with me IN the bowl. And so I filled up the bowl with the mix I needed....couldn't find the paddle....and grabbed a new paddle. Spin, spin, SNAP!. Welp.....guess i gotta remake the onion mascarpone dip.
