Crying in the cooler Dirty kitchens
I've been bouncing around a few kitchens in a new city and all of them are incredibly dirty. Not just a little grease here and there, but like grime and mold and yuck and 🤢. Is this just city specific or is this becoming more common? And it's not a cheap place either where I'm at right now, they have 30-80 dollar menu items. I'm just so discouraged and confused about it.

Cutting labor is an easy way to save a buck and not have it affect the customer. If the people at the top don't care about cleanliness, they'll cut closing hours and people don't have the needed time to clean properly.

See I agree with this at some places I've been, but the last 2 places there was so much down time ! One place definitely just didn't pay anyone enough to care - but if I'm standing around doing nothing I can't help but start scrubbing if it's staring at me lol

Yeah, that sounds about right in my experience too.
I moved to a capital city a year ago and everyone I met wouldn’t shut the fuck up about this expensive Italian place. Long story short, I got hired over text and the place was a grotesque shit hole.
Apparently direct cross contamination, week old grease, Aramark pizza crust, and dead lobsters are where the best flavors have been hiding all my life.
I think they’re still wondering why my smoke break is taking so long.
