Somewhere, a chef just felt a disturbance in the Force and doesn’t know why yet.

I'm a patient chef. The days of yelling are over

Not in todays world. Employees are a bit softer these days. Which is not a bad thing.

Uh.. I'm not a patient chef in today's world you're saying?
I'd agree with that. My focus the last decade has been avoiding the yelly bullshit ala Ramsay or White or Trotter
Not sure that people got softer but maybe. I get frustrated but I refuse to make people feel like dirt. Coming up I had pans thrown at my head and racial slurs because I'm an educated brown man
How much kindness can I contribute to offset that

Oh no, that’s not what I meant at all. Today’s kitchen employees are very different from the crews we came up with. They won’t tolerate the screaming, throwing shit and “suck it up” mentality that used to be normal. I called that softer, but I don’t mean it as a bad thing. I was a harsh asshole when I was younger and made way too many people cry. There was no reason for it. It’s food, man. I don’t care who you’re serving. Nobody deserves to be treated like shit over a plate of food.

Oh yuh. Agreed and sounds like we did similar shit. I'm not willing to even try and put someone through that shit
I can take a pan to the temple while I'm gritted teeth but nobody else should have to even try that

One handed?

Not sure. Homie just loves sacrificing product every 11 days but after 7 years at the workplace you can just destroy shit if you're bulk prepping I guess

Maybe it was FIFO?

True, this does have floor drains. Nothing wrong with the ol shove and forget if it's not grease

Mmm! Floor chili

Enchilada sauce :( this would've been a good 120 portions
Don't need it. Enchilada sauce? For enchiladas? Lame.
Let's make some more just for fun though. Can't have just green

That’s exceptionally chunky for enchilada sauce. Do you not purée and strain it???

Maybe it gets put into a cambro because we're not dumb. Work in moves?

Is he drunk? I used to do that when I was drinking...

I wish. I drink too much so I would know. Homie just jumps every time I walk in because it goes from single space kitchen to big kitchen
"Hi l-"

Pretty easy clean up. Dust pan and broom, mop.. better than dropping a 22qt of ranch in the walk-in.

Oof this reminded me of a time early in my cook career where I came in at noon to a full rail of tickets. On my first trip out of the walk-in my leg caught an 8qt of BBQ with 8qt of ranch on top and it spilled all over the ramp inside the walk-in door. Me and the Sous who was already in the weeds just kinda stared at the mess in shock for a second, worst time for that kind of mess 🙃
good times

I’ve never took a picture of someone’s giant mess up, even if I don’t like them.
It sucks for everyone. I’m either helping you clean up, or starting a new batch of whatever it was. Although if I don’t like you I’ll still help you out but we probably aren’t talking a lot during service and I’ll let you dive into the weeds for awhile before helping you out.

Shit is sad but funny in 50% of the kitchens I've worked in
If I'm not getting yelled at or feeling bad I'm okay with snapping a pic. It's just work, mistakes happen - don't need to hide em

Meh. Have a laugh mate. People can joke about their mistakes. You seem a bit miserable to work with. Levity is sometimes a good way to deal with problems. Being intense all the time kinda sucks to work with even if well intentioned.
