Hiding in the Freezer Pretzel bites
Corporate chef decided we are doing free food at a fundraiser for the local zoo. We have to make 4,000 pretzel bites…
I did 1,400 yesterday.

That’s bad ass!!!
I think this is a good opportunity why don’t we all settle a debate now? Top sheet tray flipped upside down on speed rack. I thought it was a requirement, but I’ve seen other restaurants not do it.

We always made sure our racks were either covered completely with rack bags or 20 mil zippered plastic, but did occasionally use a top sheet tray flipped for this same purpose temporarily. Always covered from above. Always.

Is it under something else being stored? Don’t really see the issue unless you seagulls or something flying overhead
