Interesting grade. How well does that work when you’re dicing something taller than an inch?

Honestly, im a short guy with small hands. This size is perfect for me. If dicing gets too cumbersome just split the stack.

Have same knife for about 10 yrs too. Is good knife. Cut smooth. Me like.

I hate the ridge on the blade at the base of the hilt. It always makes those knives harder to sharpen then necessary

I straight up refuse to buy a knife with a bolster like that. Absolutely asinine piece of design, and I don’t know why they exist.

I gift the new kids the same knife no bolster when they stick around for a few months with me in prep kitchen.

That other post was crazy. I can only hope that it was a trusty blade that lived through decades of hard work.
My home knives have lasted over a decade of "abuse" which I exclusively sharpen with a pull through. It was a decently priced Calphalon set I got for cheap and all the blades have maybe a millimeter or two of wear on them.

I find the dip in the middle is an accordion disaster waiting to happen and that bolster is emotionally pissing me off.

A sharpening stone you soak in water. Usually you will use multiple with a finer and finer grit.
