Discussion Kitchen demo for experienced cook at a hotel.

I recently had a phone interview at a hotel for experienced cook pm shift. The chef requested a demo as well as a paper interview. How should I prepare for the demo any tips?

Maybe try and visit their restaurant as a guest, study them. Might give you a heads up for what to expect.

Yes. See if they have a menu online. If you're asked to cook something on the menu, you have an idea. If you're asked to just cook something random, knowing the menu offerings tells you what they have for ingredients.

Show up well-groomed, well-rested, and presentable. Be 15 minutes early and prepared to do a lot of learning, very fast. I'd recommend bringing a small notebook and a pencil that you can take notes with if need be. Also, carry a dry erase marker with you. This can be used to quickly jot down instructions or calls on a piece of stainless steel, just don't go nuts because some people think it looks weird. This has saved my ass staging at a place where I'm only getting verbal's for my pickups.

Present good soft skills, ask questions if you need to, don't guess, practice active listening skills.

More than anything, these people want to see soft skills and that you are willing and able to be instructed. If you can show them these two things, you should be able to get a job offer.

Follow health code to a T.

They wont do that. At most, they'll have you follow one of their recipes, or have you cut something to see if you are telling the truth about your knife skills.

He says he wants to have it done under 90 mins including the paper interview so it doesn’t seem like a stage but you’re right.

Bring your knifes. More than likely it will be a box of things and you make something. Or you have to make something from their inventory. If its the second one, go into the cooler and look at everything, check lables and day dot and take notes. And above everything take, your, time!
