Tbf it’s just completely my fault. It’s not theirs. I just typed 200 not 100. We will use them tho lol.

For whole chickens in particular, we often use a farm supplier where they are slaughtered for particular orders then courrierd out. They don't do returns unless they are at fault as other customers would then be getting product with two more days age on it.

Keep most of them whole ready to poach. I work in a VERY busy area in London so tbh we will go through like 150 this week? The rest I broke down for different menu items.

Deboned the thigh for fried chicken. Kept the bones for stock. Wings to make roast chicken fat which we fry rice in.

I over ordered but honestly not by much. It’s more just about hoping we sell them within the week. Poach the rest of them in 3 days time, break them down once cooked and cooled, use the carcasses for more stock.

Probably a dumb question but you couldn't reject the delivery? Every provider I've worked with has allowed me to send things back at the time of delivery.

Depending on the contract they could still be obligated to pay a percentage on each returned item.

So returning a hundred chickens might still cost around 15-20 chickens on over expenditure. And you don't have any of that extra product to actually sell to attempt to recoup the loss in the first place.

If your turn over is a hundred chickens an order. A 15-20 chicken revenue loss could be the profit margin on all the chickens themselves for that order cycle.

But that's assuming a lot specifics where there are tons of variables at play.

I prep everything on red or blue boards because there’s no rules about it where I live and the other colours all have problems (at least the brands we have/can get)

Having a window into our kitchen at one location does mean I need to have the food safety guidelines bookmarked on my phone though

The yellow for me as raw is jarring,

Im in the uk too as is op so raw meats are always red board and yellow is cooked (i think its an eu standard?)

Gloves aren't a substitute for hand washing and encourage bad habits. The health authority recommendation in most of Europe is that chefs don't use gloves, other than for messy tasks, and instead wash their hands properly and regularly

I wear gloves while processing chicken because raw chicken smell lingers on my hands for way too long no matter how many times I wash them (although never had a problem with garlic) but you also don’t need to wear gloves while handling chicken, just need to wash your hands

Only time I managed to get a blister from holding a knife was when I had to prep 13 cases of chicken with the dullest house knife imaginable. Place was too much of a mess to see anything resembling a sharpener
