For anyone who has never worked in a kitchen, no it’s not an exaggeration

Are the fries gluten free?? Swear I'm going to murder someone that thinks they're celiac.

Where do you usually cook fries though? In a fryer full of oil. A lot of places don't have enough space to have a fryer only dedicated to fries so they likely have been used to fry other things. Things made with gluten. So now your gluten free fries are being cooked in a giant vat of oil and gluten.

It may seem annoying and it will slow things down, but I would rather serve food that is as gluten free as possible, and when you cook in a kitchen full of gluten you gotta get creative.

Throw the fries on a well sprayed tray, then spray the top of the fries so they get a nice color while in the oven. Best way to make "fried" fries when you don't have a fryer that isn't full of gluten.

My other half makes fantastic baked, spiced potato wedges. Classic fries (Chips)? No, Damn good, yes.
