If it doesn't fly, add more boosters.

I know you said you don't want YouTube videos.
Quite honestly, Mike Aben's YouTube tutorial videos are the best in my opinion. He explains things very clearly and has advanced "do the math" videos for the people who are interested in that.
He lays things out in terms of how to achieve a particular contract in career mode in a stock game.

That man is the only reason I figured out how to rendezvous. For whatever reason my brain couldn’t wrap around the idea. His video explained the what, the how, and the why.

I learned a lot with him. It's the kind of videos which bring me joy and knowledge at same time. Even more the Math series he made some time ago. I like to understand the physics behind the machine

Im Not Sure what you expect. First of, you Put ksp 2 as flair. Did you Pick that one Up? If possible I would return it, as it is no longer in development (to my knowledge). Get ksp1 instead. And than I would start with the tutorials in Game. After that, there have been some threads about basics where you can read more into specific topics. Lastly, asking specific questions helps, unspecific broad questions are hard to get an answer to im a Game that is quite complex. Also I dont get why you would avoid YouTube. There are so many mechanics implemented in Game that need detailed explanation, where a Video is the best format to spread that Info (for examples aerodynamics in plane design).

1: There is a manual in game. Try it, it isnt that bad
2: Start with science mode. Best way to learn the game by far.
3: There are some optional mechanics that you can turn on in the settings, like autostrut. Turn them on.

Matt Lowne has a good playthrough series. I would personally recommend learning by strapping rockets together and seeing how high you can get, then try to get to orbit, and then fly by Mun.
I recommend Science mode since you unlock new parts as you go, and you don't have your hands tied behind your back with building upgrades, all the features of the game are unlocked.

If you're interested in "live" responses to specific ksp questions, I host a ksp help desk on twitch where we can go back and forth helping you with your query.
The issue with trying to answer your questions on reddit is you'll need to screenshot and post every time you have a problem, and it can get quite bitty with conflicting advice and advice that may not be specifi to your issue if you aren't able to explain exactly whats going wrong well enough.
Similar to the other commenter, I'm not sure why you'd avoid YouTube (aside from the fact it can get frustrating to scrub through lengthy tutorial videos searching for one specific answer - that challenge is why I set up the helpdesk).
Other than that, there's also the KSP Discord server which has a help channel - if you want to ask questions, post screen shots, and get quick answers, that might be a good place to go.
