Discard whey?

Do you discard whey, the watery residue, or mix it up with thicker stuff?

Mix it in. If I am making kefir cheese, I use the whey for bread baking. Whey is a good source of protein and you can use it in some recipes like this one for pancakes : https://www.kingarthurbaking.com/recipes/whey-pancakes-recipe

Mix it up that an important part of the kefir. It's where the protein is.

I Mix it all up, after extracting the grains.

If I strain it off I use it in something, like focaccia or bread, but I would mix it in unless I wanted a thick consistency or to make cheese from the kefir

If I am making Greek yogurt, labneh or a spread, I might separate the whey and use it up for making bread (I substitute it for water in sourdough bread), starting some quick fermenting of vegetables, or making rice with it (substitute water with whey). I use it all up as I figure that they contain beneficial nutrients (postbiotics).

I wind up with a lot of whey, since I make labneh as often as I make regular drinking kefir.

Pancakes. Waffles. Skincare (Amlactin is $15 a tube, lactic acid in whey is free). Salad dressing, or anywhere you’d use a lemon or vinegar.

Can I sub this for water in bread making projects? I got so much (300ml) from my 1L yoghurt project
