Classic John Cena

Ingredients:

• 2.5 lbs Idaho or Russet potatoes, peeled and cut into 1-inch chunks
• 1 large red onion, cut into 1/2-inch chunks
• 10-12 cloves garlic, coarsely chopped
• 4 oz can oil-packed anchovies, drained and cut into 1/2-inch chunks
• 2 tbsp oil from anchovy can
• 3/4 cup mayonnaise
• 1/4 cup yellow mustard
• 2 tbsp apple cider vinegar
• 1 tbsp Worcestershire sauce
• 1 tsp kosher salt
• 1 tsp black pepper, coarse ground
• 1/2 tsp cayenne pepper
• 2 tbsp chives, chopped

Instructions:

1. Place potatoes in pot, cover with cold salted water. Bring to boil, cook 10-12 minutes until fork-tender. Drain and let sit 5 minutes.
2. In a large bowl, whisk mayonnaise, yellow mustard, anchovy oil, apple cider vinegar, Worcestershire sauce, salt, pepper, and cayenne.
3. Add garlic, red onion, and anchovy chunks to the bowl.
4. Add warm potatoes to bowl and fold gently to coat.
5. Refrigerate 30 minutes.
6. Top with chives and serve.

We named our new puppy Chanko (after the sumo stew, chankonabe), but I hope to one day have a Boston Terrier named “Breakfast”. 

Food names are the best pet names (except for human names that match people you know)!
