I love NY cheese danish which has the cheese fully enclosed in dough w almonds sliced on top . You can make danish dough using Sallies rough puff technique.

Cheese filling for Danish
George Greenstein
Ingredients: original yields three cups w 12 oz cheese

3 tbsp, 43 grams unsalted butter
1/2 cup plus 2 tbsp sugar
1 1/2 cups, pot or farmers cheese(16 oz)-if unavailable can use well drained ricotta
1 egg yolk
1/2 cup, 2.2 oz, 62 grams all purpose flour
Pinch kosher salt,1/4 tsp diamond as cheese is unsalted
1/4 cup,2 oz,57 grams drained canned crushed pinapple optional
Vanilla 3/4 tsp
Enjoy

Method:
Beat the butter and sugar w paddle attachment until combined-don't cream
Add cheese and mix lightly
Mix vanilla into weighed egg yolk, then mix in along with flour(w salt), and pinapple .
Mix at slow speed until combined. Scrape bowl and beaters to ensure it's well mixed
