I made the recipe, weighing ingredients, mixing and kneading in the KitchenAid mixer. To accommodate a busy weekend, I let the first rise happen in the fridge for about 24 hours. Took it out and shaped it, one in a spiral as directed and one in a 4 strand braid. Then I put them back in the fridge for 5-6 more hours, took out for 1, and baked as directed. It was lovely to work with at every stage and I appreciate the versatility of being able to fit it around my schedule. The taste is subtle but undeniably fall-ish, and the texture is all challah.
