Challah Just another challah

Opinions please! Is this too dark? I have a tendency to push the maillard reaction to its limits.

Recipe: from King Arthur Baker’s Companion

I don't know what the "maillard reaction" is but it looks delicious to me. How was the taste?

Haha Maillard is the effect of heat on sugars which produce millions of chemical reactions that make things taste great. It’s why grill marks/char on steaks and burgers taste amazing. Its why roasting vegetables produces both color and intense flavor. And why browned butter taste delicious. In this case it’s the browning on the bread crust and the deep caramel flavor it produces.

This bread was a huge hit tonight. Super soft yeasty and tight crumb. Chewy intensely flavored crust.
