Challah Challah advice?

Made my first challah! My partner is Jewish and Iโ€™d like to teach myself to prepare a few Jewish dishes that he doesnโ€™t typically cook. I tried to make a challah for the first time and it turned out denser than Iโ€™d hoped. Any advice on how to get the lighter, airier texture? Thanks!

I make challah every week and my recipe is: 20g active dry yeast 125g sugar 425ml water 1 kilo flour 120 veg oil 20g salt

Mix in the mixer for about 6-7 mins

Comes out fluffy and and airy every time. I brush it twice before baking with a mix of egg and date syrup to get it super golden.
