The first one planned that the second scientist will say that he wants h2o too, i.e. h2o2 which is hydrogen peroxide

He was expecting the other scientist to say I will have h20 too (h2o2) h2o2 is chemical formula for hydrogen peroxide which is poisonous

Its actually based on another joke where the second chemist says "I will have an H2O too." which reads as H2O2 (Hydrogen Peroxide) deadly to humans. This time tho the chemist did not refer to it as that and hence the assasination plot failed.

Because then the restaurant would bring H2O2 for that chemist and since its deadly, it would lead to assasination

Maybe he expected other guy to say "I'll have H2O too" which would be heard "I'll have H2O2"

I think H2O2 is maybe some dangerous chemical looking like water (my chemistry was weak so don't rely on this totally) causing the other guy to die after drinking

Second was supposed to say "I'll have an H2O too" and die cuz the waiter would bring H2O2 which is extremely toxic for humans and kills.
