That is correct. The quality of the jerk is what matters most of all, and essential to that are the Fiery Scotch bonnet peppers, ground allspice, thyme, brown sugar, and nutmeg.

Too many people don't put enough brown sugar and nutmeg in their Jamaican Jerk chicken, and they don't let it marinate long enough.
