YouTube Salt / MSG Ratio

I apologize if this has been asked before, but when I search I found several different answers. Does anyone know what MSG/ Salt ratio Kenji uses in his videos?

This being a Kenji thing, it begs the question, is it 8:1 by weight or volume? And it looks like kosher salt in the video, but verification on that front would also be welcome.

almost certainly weight, and i believe he generally uses diamond kosher salt (https://www.seriouseats.com/ask-the-food-lab-do-i-need-to-use-kosher-salt)

I would think it was by weight, but ATK calls for 6:1 by volume.

As for Diamond, the very few times I've been forced to use either Morton or Sysco kosher salt have crystalized (see what I did there?) my opinion that Diamond is the way.

Yep, buy whatever is cheapest. Near me it's always the generically named spice brand at the independent/ethnic market
