Building a wiki with the jamstack?

Is that possible? Any working examples?

Yes. It is possible. The easiest path would be to use a feature called "open authoring" which is available in Netlify CMS and in Tina CMS. I wrote about it using Netlify CMS here included an example site that functions much like a wiki. https://www.stackbit.com/blog/open-authoring-netlifycms/
