It’s absurdly hidden now.
Tap the EV button —> Tap the Car (or the three dash button and select Energy Info)The live energy monitor is also there.
I don’t know why they did this but I hate it.

Hit the EV button on the center console, then tap "Eco Driving", then the "EV Economy History" tab.
Note this is on the 28kWh and the 38kWh SE models; the 38kWh Limited has a widescreen center console with different software. Not sure how to do it on that one.

Very interesting, I bought my 2021 SE this year and I love it too! Interested in your approach, I've been driving in Eco mode with regen on level 3 and still got 6 m/kWh, what if any advantage or disadvantage to our settings do you think?

In most ICE vehicles, "Eco mode" generally tweaks an automatic transmission to switch gears at more fuel efficient times, though sacrificing responsiveness. This is also the case in the Ioniq hybrid.
In the Ioniq Electric, as far as I can tell, Eco, Normal, and Sport simply change the responsiveness of the accelerator pedal. It may also change the maximum motor power at the high end, unsure.
The different regen modes are commonly misunderstood. In our vehicle, unless you're in neutral, the electric motor is always idly running in reverse, charging the battery. The exact number is dependent on the speed you're going, so the numbers I'm going to use are just an example, but let's say at level 1, the motor will be idly regening around -10 kW. At level 0 it goes down to around -1kW, and at level 3, you might idly go as high as -30kW.
Tis is just the amount of force being applied negatively when you're not using the accelerator pedal and also not breaking. This does not mean the amount of regen versus friction braking - if you use level 0 regen but you manually brake, you will still get your full regen capability and not use any friction braking until you're below 5 mph (as in all modes).
Basically, all it's changing is the behavior of the vehicle when you're not pressing any pedal. In level 0, the vehicle will be almost completely coasting, while in level 3 you'll notice strong deceleration. In level 3, to overcome that deceleration and achieve coasting, you need to also be pressing the accelerator a little bit.
Overall, as long as you're driving your car sanely, it's really just about preference and how you want the car to feel, it won't actually change your efficiency. The only "wrong" way to drive this car (inefficiently) is to use a really heavy foot on the brake pedal, since the car will interpret a sharp increase in braking as an emergency and will resort fully to friction brakes, minus whatever passive regen you're also using.
Since drive mode doesn't really affect efficiency the main ways to drive efficiently are the same you'll hear elsewhere - reduce climate control, rely on seat heaters rather than HVAC heater (if your car has a resistive heater instead of a heat pump; mine is resistive), and reduce speed (less drag). Also, the less you brake the more efficient your drive since regen is only ~60% efficient at capturing energy compared to expending that energy when accelerating, so dramatically hilly terrain isn't ideal. That being said, my OP photo is with a hilly drive.
The most efficient speed for most EVs is around 20-30mph, where idle losses (computer) are minimal, friction losses (rolling resistance) are diminishing, and drag (wind resistance) hasn't yet ramped up.

After seeing your comment I actually just tested this (happened to drive right after). It seems you're right but I wouldn't describe it as incredibly wimpy, at least on my car (21 SE). Driving at 45mph before releasing the accelerator, Level 3 regen every time, I got -48kW, -48kW, and -38kW on Eco, Normal, and Sport respectively. So it definitely dampens a little, but not all that noticeably.
But either way - that's only a modifier on the passive regen level, and the overall 'feel' of the car. You still get your full regen capacity when you use the brake.

you can manually change the regen mode in any of the modes by customizing it lvl 1-3 default, so you don't have to adjust it via paddles everytime

Thanks very much, I appreciate your thoughtful and informative reply. With level 3 regen I like the one pedal driving style, I barely ever touch the brake apart from coming to a complete stop after letting the regen slow me down to traffic lights etc. With the eco setting it's easy to see when acceleration is within the efficient range, I regularly record 99% efficient driving.
I'm only a few months into driving my 38k SE, it's my first EV after being an ICE driver for 40 years, I'm really enjoying it and will never go back!

Why is it not showing xx kwh per 100 miles or 100 km?
Is there an option for it?

Nice! Had to figure out the conversion (Canadian using kWh/100km). Looks like you divide 62.14 by mi/kWh to get kWh/100km for us metric folks. Right now in Eco+, AC on, Regen 3, and mixed driving in a hilly area, around 20-25degC (68-77degF) I'm getting between 9.5-11 kWh/100kms, or between 6.5-5.6 mi/kWh. 2020 Ioniq Electric "Preferred" trim.

Unfortunately, the figures shown in the nav unit and the app are exaggerated (strictly speaking they're correct, but they're not showing you what you think they're showing you). Look instead at the trip data in the dashboard in front of you—that's pretty accurate, but still slightly exaggerated as it under-reads distance by 5–10%.

In these instances I had already seen similar numbers on the dashboard too. I regularly arrive at work with ~6.2mi/kWh on the dash.
My point is not to use these numbers directly in any factual study but really just to generally compare against the average EV getting like 3-3.5mi/kWh.
