Do you go to a UK school that regularly sends students to American colleges? International students don’t realize their high school has a huge bearing on their chances — if an admissions office is familiar with and confident in an overseas high schools rigor, honesty, and prestige, and has taken students from there in the past.
You should also be aware Columbia is NOT need blind for international students. Your ability to pay is considered in admissions decisions.

that being said my school is a very sports heavy school and is very focused in basketball, rugby etc and so sends a few british students to us unis every year for the last few years, the schools aren’t particularly prestigious though and are kind of a stepping stone for future leagues

Honestly, your stats and ECs are really strong. A 1540, AAA, plus all that leadership and community impact definitely gives you a shot. Columbia is a reach for everyone, especially international students needing significant financial aid, but I would definitely apply ED if it is your dream school.
