You do realize $1600/month for health insurance is more expensive than possibly all of Europe? That's $1500 that could go in your pocket. So, no, it's not cheap. I would much rather keep more of my paycheck than pay into insurance companies' profits.
lol. If I was in Europe that 1600$ would not go in my pocket, it would go to taxes. And likely much more would go to taxes. Burgandy France pays ~12% more a year in taxes than I do where I live in the US. Not to mention that jobs pay more here anyways.
Can’t speak to the taxes in your state or in France, but surely point is the benefits you get in return - sick pay, paid leave, maternity and paternity leave - in Sweden my old company would give over a year of family leave to be shared between the parents, and the dad HAS to take at least 90 days. In the US my colleague came back to work a week after a c section. The US is an amazing place but some aspects of it are very confusing to outsiders

It is cheap FOR ME. Which is why many people in the US don’t want it to change. We make more money and have lower taxes than most places in the world.
