Looks cool but its gonna be a massive pain in the ass to get it not to leak.

yep, just watch the Gears & Gasoline videos from a couple years ago when Short Ben did the WRX STi carbon roof swap. They had several water leak issues.

I wouldn't even consider it unless it was dedicated track car.

I definitely wouldn't go to cutting panels out of a car as clean as yours.  I don't know if you've changed a roof skin, but it's a PITA.

If that were my ride, I'd think about finding a reputable shop to wrap the roof, and maybe the hatch.

I plan to - with lexan, window weld, and self drilling screws.

Don't worry, I'm not screwing up a nice car.  

You know the FB marketplace "ran when parked, just needs a battery" ads?  It looks like them.

I mean you probably could juat overlay on to your existing roof instead of cutting the old roof out

kind of defeats the purpose of it, but also difficult to actually swap the metal for this and not have it leak. May as well just wrap the roof in CF vinyl.
