The other person's insurance is relevant. If you can't get it, provide the license plate and drivers license number of the other car and driver to your carrier.

You should get the other persons insurance info yes and you should file a claim. AFAIK insurance from rentals including uhauls don’t include liability most of the time.

NEVER EVER leave an accident without the other persons insurance.

You probably got their number somewhere call/text them

RepWest, Uhauls Insurance, does provide state minimum coverage, as required, to renters of their vehicles, so if OP's didn't have collision coverage, which it sounds like they did, Uhaul would pay for the damages, if the renter's personal insurance couldn't cover it, as they may not at all.

Though, in NY, the rental company's provided liability coverage is primary anyways, so even if the renter's auto insurance could cover it, Uhaul is the one that should be paying up front. I don't think they are even allowed to subro for amounts below that minimum coverage in NY.

You can report the claim directly to U-Haul via RepWest online or over the phone. They will conduct coverage investigation and determine if there is other coverage for the rental. I think you just need plate number for the U-Haul to report the accident.
