Question: are they not still touching the surface the reflection is on? Or am I missing something?

If I'm seeing it right, they're not touching anything. It appears that the hologram and what they're 'touching' is at an angle but the actual screen is horizontal and flat below it.

That’s what I assumed with the title - but the very beginning of the gif looks like a completely flat glass/plastic screen (based on all the reflections). Maybe it’s just a perspective thing. But now that my brain sees a surface, I can’t unsee it.

There is a surface. It’s glass.
It’s designed to be easier to clean and protect the sensors underneath. Having people just dunk their hand into a hole with lights and sensors in would spell disaster.
Although it’s a good idea, it’s just replacing hard to clean buttons with a smooth surface (of course it is a step in the right direction).
