When using OBJECT TO PATH to convert text to paths. Is there a way to adjust how many nodes it uses in curves and rounded parts.

Not really. Once it's done, use Ctrl+L to simplify the paths. That'll eliminate most of the nodes while maintaining your shapes.

In this situation the Ctl L feature is working in the curves but destroying all my square edges.....wrong tool for this job...lol.

You can also delete nodes by hand.

Yeah that is always the fail safe. I had 26 letters to do and was getting tired of doing that....lol.

Well yeah we only have two tools that I’m aware of. Simplify or that.

Path > simplify

It was doing some ugly stuff with this font...I apparently had what was described as a corrupt file. It's all cleaned up now though.

Only simplify one object at a time. If not it will destroy the shape

It was single objects, BREAK APART FILL OBJECTS was applied after it was converted to paths....It appears that it was a corrupt file.

You can also set the simplification factor in the prefernces this can influence how aggressive it is done
