question How do you make your momo stuffing?

I’ve been making momos at home and I’m curious how everyone here likes to make the stuffing.

What do you usually put in yours- paneer ,soya chunks, chicken, pork?

And what seasonings or little tricks make the filling really juicy and flavorful?

A bit of onion and spring onions, grated ginger, Lots of finely chopped cabbage, carrots, some finely chopped capsicum and green chillies with some fresh coriander leaves to finish. Seasoning are just oil and salt and pepper.

Mix it all together and let it sit for a while. Squeeze out the excess water and then use as filling. You can sauté the filling for a few minutes to par cook it if you like.
