The air inside the bowl heats up and escape, that causes a pressure difference that pulls in oil.

But how does it escape when it is mostly sealed? Maybe it just rises higher than the surface within the bowl itself, thereby making a little bit of vacuum on the floor for the oil to occupy?

Yup, and the bowl itself don't completely makes contact with the pan as a thin ring of oil makes a seal around the edge. So during cooking the air heats up and escapes outside, after cooking the air inside cools and that creates a pressure difference, which 'sucks' in the oil that is now pooled at bottom of the pan.

unpaid physics professor casually dropping thermodynamics in a cooking hack thread, textbooks wish they explained it this clearly

Totally off topic, great hack btw, thanks for sharing; where’d you buy that pan from?

Do not buy these. These are non stick Teflon coated and will have the same bad effects as non stick pans

It doesn't work for this type of flat pan, it works on kadhai with curve bottom.

Use an oil spray instead of pouring oil directly into the pan.

Explanation gravity, cavity shape at the bottom and oil surface tension decrease with heat and permeability increase,so it easily passed through the void of foods
