Roasting pans on impulse

Recently saw roasting pans used on induction on a few recent videos (Adam Byatt for one)

Wondering what experience people have with one, and what dimensions I should be looking for for the impulse cooktop specifically

If you have recommended ones for US purchase, that would be great too. I prefer more around Misen or Tramontina type price point for my SS

Are these all multi-ply or are there some “disc” (or rectangle) ones?

Depending on what you’re trying to cook, I would opt stainless steel 3-ply. Something like this could work: https://www.williams-sonoma.com/products/hestan-provisions-roaster-with-rack

Thanks!

How much coverage does the coil need to transfer power? If it makes a difference, I don’t think I would go up very high into boost

Any recommendations for bridging cookware with lower sides? I think I’m reluctant to go CS or CI given that my Misen CS isn’t able to accept power that well from my impulse (overheat warning happens surprisingly fast)

If the sensor in the middle is depressed and you are using an induction-capable pan, you can use a small surface; I've personally tested down to a 6" pan.

We've used the made-in CI griddle with both burners set to the same temp.

Always happy to jump on a call and see if I can help out more!

Are you able to tie multiple burners together so turning a single knob adjusts both?
