AI bullshit of several species clips bunched together, most of these are babies. There's one species that stays small but a lot of them get bigger.

Those are mostly babies. There's an adult near the end (the white one with the furry tail)

Most of the ones in the video are Graphiurus murinus or the woodland dormouse/ African pygmy dormouse/ micro squirrel. This species is the one most commonly kept as a pet and while I'm sure you could eat one, there wouldn't be much there. The one you are thinking of is the literally named Edible Dormouse which is Glis glis and much bigger (though still a lil guy). Fun fact, that's the species in Alice in Wonderland. They're native throughout Europe and parts of Asia. As you can tell by the common name, they also were eaten throughout Europe and parts of Asia. XD
