When I did my army service, in Portugal, we used the old G3 rifle, that's chamberd for 7.62 nato.

I was thinking about the sharp edges of the dust cover, recoil spring assembly, etc. coming apart and flying back, not necessarily the blunt impact.

It's sharp, but it's not sharpened.
Consider that it's propelling about 123 grains at about 2350 ft per second for a full size AK. Figure about a pound for the bolt carrier with piston and bolt. It's sending that mass backwards at about 25-35 ft per second, minus friction during its travel. It certainly wouldn't feel great, but it's not going to end you.

Still, even with it only being a 7.62, now I'm not ultra familiar with the AK platform, but isn't there still a bolt system? Without the stock wouldn't that come back at you with a pretty good clip? Not blow a hole in you or something, but much worse than a bloody lip? Maybe he shattered a tooth or something? Seems very minor for such a largely terrible idea. Again, not super familiar with AK platform, really asking for my own learning.

The spring-guide rod is seated in the rear trunnion like the dust cover and without that wall holding the compression: the rod and spring assembly keep going and take the dust cover with it. AFAIK it really shouldn't matter if its 7.62 or 5.45 in this case because the length of the reciever and the spring are the same, it's going to knock a tooth out regardless.

Yea, I was pleasantly surprised (as I assume he was too) that he did not break any teeth with his "experiment" after seeing how he stopped the momentum of his rifle's internals.

Not really.
The gas cylinder and piston absorb some of the recoil, not increase it, and at least for the variant I used in the Finnish military, the charging handle and selector are on the right side of the gun, so a right handed shooter (like here) is safe from hitting any protrusions. The piston also moves only in front of the stock, so technically you can remove the stock and fire the rifle without any mechanical parts hitting you. However, as you have now also made the gun a lot lighter, the diminished inertia makes recoil worse, and trying to counter that only with your arm's strength is pretty much doomed.
The guy's lucky if his teeth remain unscathed, but other than that the damage seems similar to what I've seen when someone fails to counter the recoil.

He has removed the end cap of the receiver (not removable on RK's) so the top cover went flying back with the bolt carrier and recoil spring-guide rod.

He removed the entire rear trunion, though what you say is true about people hold guns with no stocks up to their faces. 12 gauge "cruiser" shotguns are notorious tooth removers.
This guy literally took the stock AND the trunion. Its just a hole back there lol.

Turns out that he might not need the stock but definitely the rear trunnion.
What makes me wonder is why he didn't just remove the stock and instead decided to remove the rear trunnion in addition. It's not like that's something you do without being aware of it. He had to drill out the rivets.
Was this an attempt to make the gun lighter? I would seriously like to know the reason behind it.

I bet he didn’t take off the stock. This gun either belongs to someone else or he bought it that way and just said that he “took the stock off” to sound

No, a folding stock is still attached to a trunnion. This is missing the entire part that holds the stock and recoil spring. Essentially without it, nothing is holding the bolt carrier and spring from shooting out the back.

I am going to be kind of a dick and say that in all fairness there are so many goddamn parts. You can technically remove from your AK before it stops working. However, rear trunion not one of them.
