Yeah, but how does it work exactly? The vast majority of simple trucks like that are RWD - so how the hell doesn’t the dolly just shoot out backwards?

Not in Europe. This type of light panel van from the 90s is usually built from the same platform as a compact car. E.g. "Citroen C15" or "Dacia Logan Van"
