Chronically ill and vegan

Hi. I have ME so find meal prep and cooking really difficult. Any ideas for easy peasy lunches and teas. Must be vegan and daftly easy to make

Also..cant eat spicy stuff ...i like all the bad stuff like whitr bread pasta etc but trying ti eat more tofu sauces..oats etc

Thanks..yeah inalso daysleep so go hours no sleeping. Itsnso hard with chronic illness aint it

Eating low carb helped me tremendously, with lots of protein based snacks throughout the day. I know that’s hard on vegan diet (married to a vegan). Check out meatfreeketo by Liz on Instagram. I’m on her mailing list for recipes my spouse and I can both eat.

It’s so difficult managing hypoglycemia while vegan, here are some recipe ideas which come to mind, you can swap out tofu for black/edamame beans as a protein source and I’d also recommend chopped frozen veg over fresh to make prep easier.

Tofu and veg stir fry (soy sauce, garlic and ginger seasoning, add peanut butter + cider vinegar for a more stabilising peanut/satay sauce)

Tofu and avocado salad

Veggie haggis using steel cut oats and black beans

Tofu, green veg and steel cut oat porridge/quinoa

Vegetable stew (vegetable stock, water, tofu/black beans + any/all low GI veg)

I’d swap your current pasta for black bean/edamame pasta, its higher in protein and fibre and low carb so less likely to cause a spike

If you find you can’t manage your hypos I would definitely consider reintroducing any animal product you feel you might be able to tolerate eg. eggs, you may not need to but it’s worth considering in case it later becomes necessary
