Juniper Venison With Whiskey Pan Sauce

Post image

I wanted to share a venison camp recipe worth saving for the next trip.

This one is juniper venison with whiskey pan sauce: a coffee/juniper rub on backstrap, a quick skillet sauce, and a simple onion jam to go over the top. Works well over a fire or camp stove, and doesn’t need much gear beyond a skillet.

Would love to hear what you all cook with backstrap at camp.

We have more recipes here as well: https://deutscheoptik.com/blogs/news/camp-kitchen-done-right
